Instructions
- Brown the chicken: Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add the chicken pieces and cook for 4 to 5 minutes until they are lightly browned and mostly cooked through.
- Add aromatics: Stir in the minced garlic and grated fresh ginger, and cook for about 30 seconds until fragrant.
- Create the sauce base: Mix in the honey, low sodium soy sauce, hoisin sauce, black pepper, and chicken broth, scraping the bottom of the pan to incorporate any browned bits. Bring the mixture to a gentle boil.
- Cook the noodles: Add the uncooked broken spaghetti or linguine to the sauce, pressing it down so the noodles are mostly submerged. Reduce heat to medium and simmer for 10 to 12 minutes, stirring occasionally until the noodles are tender and most of the liquid has reduced.
- Add vegetables: Stir in shredded carrots, sliced red bell pepper, and snap peas. Cook for an additional 2 to 3 minutes until the vegetables are just tender.
