Description

This One Pot Lemony Pasta with Sausage, Broccoli Rabe, and Burrata is a flavorful and easy Italian-American main course. Combining savory Italian sausage with slightly bitter broccoli rabe, bright lemon zest and juice, and creamy burrata cheese, this comforting pasta dish comes together quickly on the stovetop with minimal cleanup. Perfect for a weeknight dinner that feels both fresh and indulgent.

Ingredients

Scale

Pasta and Broccoli Rabe

  • 12 ounces short pasta (such as orecchiette or penne)
  • 1 bunch broccoli rabe (trimmed and chopped)
  • 1 lemon (zested and juiced)

Proteins and Cheeses

  • 1 pound Italian sausage (casings removed)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces burrata cheese (torn into pieces)

Seasonings and Others

  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes
  • 3 cups low-sodium chicken broth
  • Salt and black pepper to taste

Instructions

  1. Cook the sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook for about 5–7 minutes until browned and fully cooked through.
  2. Add aromatics: Stir in the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
  3. Start pasta cooking: Add the short pasta, chicken broth, and lemon zest to the pot. Bring the mixture to a boil.
  4. Simmer pasta: Reduce heat and simmer uncovered, stirring occasionally, for 10–12 minutes until the pasta is al dente and most of the liquid has been absorbed.
  5. Add greens: Stir in the chopped broccoli rabe and cook for an additional 3–4 minutes until the greens are tender.
  6. Finish and season: Remove the pot from heat and stir in the lemon juice and grated Parmesan cheese. Season with salt and black pepper to taste.
  7. Serve: Divide the pasta among bowls and top each serving with torn pieces of creamy burrata cheese. Serve immediately for best texture and flavor.

Notes

  • For a milder green, substitute spinach or kale for the broccoli rabe.
  • Use spicy Italian sausage for added heat.
  • Add extra lemon juice for a brighter, more citrus-forward flavor.
  • Burrata should be torn fresh and added just before serving to maintain its creamy texture.
  • This dish is nut-free and suitable for those avoiding nuts.
