For the Salad
- 4 medium boneless, skinless chicken breasts

- 4 hard-boiled eggs, peeled and quartered

- ½ cup red onion, thinly sliced
- ¼ cup dairy-free blue cheese, crumbled (optional)

- 2 tablespoons Dijon mustard
- 2 tablespoons honey (or maple syrup for strict paleo)

Instructions
- Preheat the Grill: Heat your grill to medium-high heat and brush the grate lightly with olive oil to prevent sticking.
- Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper. Place them on the grill and cook for 6 to 7 minutes on each side, or until the chicken is fully cooked. Remove from the grill and let the chicken rest for a few minutes before slicing it thinly.
- Assemble the Salad: In a large bowl, combine the mixed greens with the quartered hard-boiled eggs, sliced avocado, halved cherry tomatoes, and thinly sliced red onion. Toss gently to mix.
