- Bake the Browned Butter: Melt unsalted butter in a saucepan over medium heat. Let it foam and keep moving the pan to prevent burning. Continue cooking and stirring until the butter turns a golden brown, about 4 minutes, then remove from heat to cool slightly.
- Whisk Egg Whites and Sugar: In a large bowl, whisk together the egg whites and sugar until the sugar dissolves and the mixture becomes thick and foamy, approximately 2 to 3 minutes.
- Combine Dry Ingredients and Butter: Gently fold in the almond meal, all-purpose flour, vanilla extract, and salt into the egg white mixture. Then whisk in the browned butter until fully incorporated.
- Fill Muffin Cups: Pour the batter into the prepared mini muffin cups almost to the top. Tap the pan gently to remove any air bubbles.
- Partial Bake: Bake the financiers for 5 minutes at 400 degrees F.
- Add Peach Topping: Remove the pan from the oven and top each financier with one small peeled peach piece.
