Ingredients
Scale
Lasagna Noodles
- 1 package of no-bake lasagna noodles
Cheesecake Mixture
- 1 cup heavy cream
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups whipped topping
Pecan Pie Filling
- 2 cups chopped pecans
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup corn syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Optional Topping
- 1/2 cup chocolate chips
Instructions
- Prepare Noodles: Prepare the no-bake lasagna noodles according to package instructions, then set them aside to cool completely before assembling.
- Make Cheesecake Mixture: In a medium mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped topping until well combined and creamy. Set aside.
- Cook Pecan Filling: In a saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, cinnamon, and salt. Allow the mixture to simmer for 3-5 minutes until the sugar dissolves and the syrup thickens slightly.
- Add Pecans: Stir the chopped pecans into the syrup mixture, coating them evenly. Continue cooking for 1-2 minutes to blend flavors, then remove from heat.
- Assemble Layers: In a 9×13 inch dish, spread a thin layer of the cheesecake mixture on the bottom. Layer with no-bake lasagna noodles, then spread a layer of the pecan mixture on top.
- Repeat Layers: Continue layering noodles, cheesecake mixture, and pecan filling, finishing with the remaining cheesecake mixture as the top layer.
- Chill Dessert: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight. This allows the flavors to meld and the dessert to set firm.
- Add Topping and Serve: Before serving, sprinkle chocolate chips over the top if desired for an added touch of indulgence. Slice and enjoy chilled.
Notes
- Ensure the no-bake noodles are fully cooled before assembling to prevent melting the cheesecake mixture.
- For a richer flavor, use homemade whipped topping or fresh whipped cream.
- Storing the dessert overnight enhances the melding of flavors and texture.
- Optional chocolate chips add a nice contrast but can be omitted for a nut-focused dessert.
- Keep refrigerated until serving to maintain structure and freshness.
