- ¼ cup granulated sugar
- ¼ cup unsalted butter, softened
- 1 egg

- 1 tablespoon all-purpose flour

Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Make the Pistachio Filling: In a food processor, blend the pistachios and granulated sugar until finely ground. Add softened butter, egg, almond extract, and flour, then pulse until the mixture is smooth and creamy, forming a rich pistachio cream.
- Prepare Croissants for Filling: Slice each croissant horizontally like a sandwich, but leave one side intact to hold the filling inside without it falling out.
