Description

Delight in these buttery, flaky pistachio filled croissants featuring a rich almond-pistachio cream filling. Perfect for breakfast or dessert, this easy-to-make recipe combines store-bought or homemade croissants with a creamy, nutty filling, baked until golden and finished with a dusting of powdered sugar.

Ingredients

Scale

Croissants

  • 1 package (4 large) store-bought croissants or 4 homemade croissants

Filling

  • ½ cup unsalted shelled pistachios
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, softened
  • 1 egg
  • ½ teaspoon almond extract
  • 1 tablespoon all-purpose flour

Finishing

  • 2 tablespoons milk (for brushing)
  • powdered sugar, for dusting

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Make the Pistachio Filling: In a food processor, blend the pistachios and granulated sugar until finely ground. Add softened butter, egg, almond extract, and flour, then pulse until the mixture is smooth and creamy, forming a rich pistachio cream.
  3. Prepare Croissants for Filling: Slice each croissant horizontally like a sandwich, but leave one side intact to hold the filling inside without it falling out.
  4. Fill the Croissants: Spoon about 2 tablespoons of the pistachio filling into the center of each croissant and gently press to close. Optionally, spread a thin layer of filling on top for added flavor and decoration.
  5. Brush and Bake: Lightly brush the tops of the croissants with milk to promote browning and shine. Place them on the prepared baking sheet.
  6. Bake: Bake the croissants in the preheated oven for 12 to 15 minutes, until they turn golden and have slightly crisp edges.
  7. Cool and Serve: Allow the croissants to cool slightly after baking, then dust with powdered sugar for a lovely finishing touch before serving warm.

Notes

  • For added texture and crunch, sprinkle crushed pistachios on top of the croissants before baking.
  • These croissants are best served warm to enjoy their fresh, flaky texture and creamy filling.
  • Store any leftovers in an airtight container for up to 2 days and reheat in the oven to maintain crispness.
