Ingredients
Scale
For the Enchiladas
- 8 large flour tortillas
- 2 cups shredded mozzarella cheese
- 1 cup sliced pepperoni
- 1 1/2 cups pizza sauce
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped green bell pepper (optional)
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the enchiladas.
- Prepare Baking Dish: Spread about 1/2 cup of pizza sauce evenly on the bottom of a 9×13-inch baking dish to prevent sticking and add extra sauce flavor.
- Assemble Tortillas: On each tortilla, spread a thin layer of pizza sauce, then sprinkle with shredded mozzarella cheese, pepperoni slices, black olives, and chopped green bell pepper as desired.
- Roll Tortillas: Roll up each tortilla tightly to keep the fillings inside and place each roll seam-side down in the prepared baking dish.
- Add Remaining Sauce: Pour the remaining pizza sauce evenly over the rolled tortillas to keep them moist and flavorful during baking.
- Top with Cheese and Spices: Sprinkle the top with the remaining mozzarella cheese, dried oregano, and garlic powder for added flavor and a nice golden finish.
- Bake the Enchiladas: Place the dish in the oven and bake uncovered for 20-25 minutes, or until the cheese is fully melted, bubbly, and lightly browned.
- Garnish and Serve: Remove from the oven and garnish with fresh basil or parsley if desired before serving warm.
Notes
- You can customize the fillings by adding other favorite pizza toppings like mushrooms, onions, or cooked sausage.
- For a spicier twist, add a sprinkle of crushed red pepper flakes before baking.
- To make this dish vegetarian, simply omit the pepperoni or substitute it with plant-based alternatives.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven to maintain crispness.
