Description

Pizza Enchiladas combine the best of both worlds: the cheesy, saucy goodness of pizza rolled up in a tortilla and baked to perfection. This easy-to-make dish features flour tortillas filled with mozzarella, pepperoni, and classic pizza toppings, all smothered in pizza sauce and baked until bubbly and golden. Perfect for a fun family dinner or casual get-together, these enchiladas put a creative twist on traditional pizza flavors.

Ingredients

Scale

For the Enchiladas

  • 8 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • 1 1/2 cups pizza sauce
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped green bell pepper (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the enchiladas.
  2. Prepare Baking Dish: Spread about 1/2 cup of pizza sauce evenly on the bottom of a 9×13-inch baking dish to prevent sticking and add extra sauce flavor.
  3. Assemble Tortillas: On each tortilla, spread a thin layer of pizza sauce, then sprinkle with shredded mozzarella cheese, pepperoni slices, black olives, and chopped green bell pepper as desired.
  4. Roll Tortillas: Roll up each tortilla tightly to keep the fillings inside and place each roll seam-side down in the prepared baking dish.
  5. Add Remaining Sauce: Pour the remaining pizza sauce evenly over the rolled tortillas to keep them moist and flavorful during baking.
  6. Top with Cheese and Spices: Sprinkle the top with the remaining mozzarella cheese, dried oregano, and garlic powder for added flavor and a nice golden finish.
  7. Bake the Enchiladas: Place the dish in the oven and bake uncovered for 20-25 minutes, or until the cheese is fully melted, bubbly, and lightly browned.
  8. Garnish and Serve: Remove from the oven and garnish with fresh basil or parsley if desired before serving warm.

Notes

  • You can customize the fillings by adding other favorite pizza toppings like mushrooms, onions, or cooked sausage.
  • For a spicier twist, add a sprinkle of crushed red pepper flakes before baking.
  • To make this dish vegetarian, simply omit the pepperoni or substitute it with plant-based alternatives.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven to maintain crispness.
