- 1 (8-inch) pan of cornbread, baked and crumbled
Salad Mix
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn kernels, drained
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
Dressing
- 1 cup sour cream
- 1 cup mayonnaise
- 1 (1 oz) packet ranch seasoning mix
- Salt and pepper to taste
Instructions
- Prepare Cornbread: Bake the cornbread in an 8-inch pan according to your recipe or package instructions. Once baked, allow it to cool completely, then crumble it into bite-sized pieces. Set aside.
- Make Dressing: In a small bowl, whisk together the sour cream, mayonnaise, and ranch seasoning mix until smooth. Season with salt and pepper to taste.
- Combine Salad Ingredients: In a large bowl, gently mix the pinto beans, corn, diced green and red bell peppers, halved cherry tomatoes, finely chopped red onion, chopped green onions, and shredded cheddar cheese until well combined.
- Assemble the Salad: In a large trifle dish or clear bowl, layer half of the crumbled cornbread at the bottom. Add half of the salad vegetable mixture over the cornbread, then spread half of the dressing on top. Repeat the layers ending with the dressing on top for a beautiful layered effect.
- Chill and Serve: Cover the assembled salad and refrigerate for at least 2 hours to allow the flavors to meld. Serve chilled or at room temperature for best taste.

- For best flavor, prepare this salad a few hours in advance or the night before serving.
