Description

These Pumpkin Pie Pop Tarts are a delightful seasonal treat featuring flaky pre-made pie crust filled with a spiced pumpkin puree filling. Baked to golden perfection and finished with a sweet glaze, they make a perfect breakfast or dessert for autumn celebrations.

Ingredients

Scale

Pastry

  • 1 package pre-made pie crust (contains 2 crusts)

Filling

  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar
  • 1 tsp pumpkin pie spice
  • Pinch of salt

Egg Wash

  • 1 egg yolk mixed with 1 tbsp water

Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) to ensure it reaches the proper temperature for baking the pop tarts evenly.
  2. Prepare Pie Crust: Roll out the pre-made pie crust on a lightly floured surface. Cut the dough into 3×4 inch rectangles to form the base and top of each pop tart.
  3. Make the Filling: In a bowl, mix together pumpkin puree, brown sugar, pumpkin pie spice, and a pinch of salt until the mixture is smooth and well combined.
  4. Assemble Pop Tarts: Place one rectangle of pie crust onto a parchment-lined baking sheet. Spoon about one tablespoon of the pumpkin filling onto the center of each rectangle. Top with another rectangle of pie crust and press the edges to seal tightly.
  5. Apply Egg Wash: Brush the tops of each sealed pop tart with the egg yolk and water mixture to give them a shiny, golden finish after baking.
  6. Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the pop tarts are golden brown and cooked through.
  7. Make Glaze: While warm, whisk together powdered sugar and milk to create a smooth glaze. Drizzle the glaze over the warm pop tarts to add sweetness and a glossy finish before serving.

Notes

  • Ensure the edges of the pop tarts are sealed well to prevent the filling from leaking out during baking.
  • Use canned pumpkin puree specifically; do not substitute with pumpkin pie filling which contains added spices and sugar.
  • Allow pop tarts to cool slightly before glazing to prevent the glaze from melting off.
  • Store leftover pop tarts in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
