Ingredients
Scale
Raviolis
- 1 (8.8 oz) container roasted cauliflower and cheese raviolis (or raviolis of choice)
Sauce
- 1½ tablespoons harissa paste
- 1 tablespoon tomato paste
- ½ cup coconut cream
- 1 tablespoon olive oil
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- 1 clove garlic, minced
- ½ cup mini peppers, sliced
- Salt and pepper, to taste
- Chopped parsley, for topping (optional)
Instructions
- Cook Raviolis: Prepare the raviolis according to the package directions, usually boiling them until they float and are tender. Drain and set aside.
- Heat Olive Oil: While the raviolis cook, warm the olive oil in a skillet over medium heat to prepare for sautéing the peppers.
- Sauté Peppers: Add the sliced mini peppers to the skillet and cook for about 5 minutes, stirring occasionally, until they soften slightly.
- Add Garlic and Spices: Stir in the minced garlic and cook for 40 seconds to 1 minute until fragrant. Then add cumin, smoked paprika, salt, and pepper, mixing thoroughly to combine flavors.
- Combine Harissa and Tomato Paste: Add the harissa paste and tomato paste to the skillet, stirring well to incorporate all ingredients evenly.
- Finish Sauce: Whisk in the coconut cream and reduce heat to medium-low. Let the sauce simmer for 5-6 minutes, stirring frequently, until it becomes smooth, creamy, and slightly thickened. Taste and adjust seasonings if needed.
- Toss Raviolis in Sauce: Add the cooked raviolis to the skillet and gently toss to coat them thoroughly with the creamy harissa sauce.
- Serve: Transfer the raviolis to plates, optionally sprinkle with chopped parsley for freshness, and serve warm immediately.
