Description

Delicious roasted cauliflower and cheese raviolis tossed in a rich and creamy harissa sauce, infused with warm spices and sautéed mini peppers, perfect for a quick and flavorful meal.

Ingredients

Scale

Raviolis

  • 1 (8.8 oz) container roasted cauliflower and cheese raviolis (or raviolis of choice)

Sauce

  • 1½ tablespoons harissa paste
  • 1 tablespoon tomato paste
  • ½ cup coconut cream
  • 1 tablespoon olive oil
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • 1 clove garlic, minced
  • ½ cup mini peppers, sliced
  • Salt and pepper, to taste
  • Chopped parsley, for topping (optional)

Instructions

  1. Cook Raviolis: Prepare the raviolis according to the package directions, usually boiling them until they float and are tender. Drain and set aside.
  2. Heat Olive Oil: While the raviolis cook, warm the olive oil in a skillet over medium heat to prepare for sautéing the peppers.
  3. Sauté Peppers: Add the sliced mini peppers to the skillet and cook for about 5 minutes, stirring occasionally, until they soften slightly.
  4. Add Garlic and Spices: Stir in the minced garlic and cook for 40 seconds to 1 minute until fragrant. Then add cumin, smoked paprika, salt, and pepper, mixing thoroughly to combine flavors.
  5. Combine Harissa and Tomato Paste: Add the harissa paste and tomato paste to the skillet, stirring well to incorporate all ingredients evenly.
  6. Finish Sauce: Whisk in the coconut cream and reduce heat to medium-low. Let the sauce simmer for 5-6 minutes, stirring frequently, until it becomes smooth, creamy, and slightly thickened. Taste and adjust seasonings if needed.
  7. Toss Raviolis in Sauce: Add the cooked raviolis to the skillet and gently toss to coat them thoroughly with the creamy harissa sauce.
  8. Serve: Transfer the raviolis to plates, optionally sprinkle with chopped parsley for freshness, and serve warm immediately.

Notes

  • Feel free to use your favorite ravioli variety if roasted cauliflower and cheese are unavailable.
  • Adjust the amount of harissa paste according to your preferred spice level.
  • Coconut cream gives a rich texture; you can substitute with heavy cream or cashew cream for a different flavor profile.
  • This dish pairs well with a simple green salad or crusty bread.
  • For vegan option, ensure the raviolis are plant-based.
