Description

This Slow Cooker Chicken Fajitas recipe offers a deliciously easy and hands-off way to enjoy classic Tex-Mex flavors. Tender chicken breasts are slow-cooked with a vibrant mix of bell peppers, onions, diced tomatoes, and green chiles, all seasoned with zesty fajita spices and enhanced by lime juice. Perfect for busy weeknights, this recipe yields flavorful, juicy fajitas that can be quickly assembled in warm tortillas with your favorite toppings.

Ingredients

Scale

Vegetables

  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 large onion, sliced

Proteins

  • 3 large chicken breasts, boneless and skinless

Canned Goods

  • 10 oz diced tomatoes (1 small can)
  • 4 oz green chiles (1 small can)

Seasonings & Extras

  • 2 tablespoons fajita seasoning
  • 1 lime, juiced
  • 8 tortillas, for serving

Instructions

  1. Layer Vegetables: Add half of the sliced bell peppers and onions into the bottom of your slow cooker, creating a flavorful vegetable base.
  2. Add Chicken and Season: Place the chicken breasts on top of the vegetable layer and sprinkle 1 tablespoon of fajita seasoning evenly over the chicken to build the flavor layers.
  3. Add Remaining Ingredients: Add the diced tomatoes, green chiles, and the remaining bell peppers and onions on top of the chicken. Season with the remaining tablespoon of fajita seasoning and pour in the juice from the lime to brighten the dish.
  4. Cook: Cover the slow cooker and cook on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours until the chicken is tender and fully cooked.
  5. Shred Chicken: Remove the chicken breasts from the slow cooker and slice into strips or shred using two forks. Return the shredded chicken to the slow cooker and mix thoroughly with the cooked vegetables and juices.
  6. Serve: Warm the tortillas and spoon the fajita mixture into them. Add your favorite toppings such as sour cream, guacamole, or cheese, and enjoy your flavorful homemade fajitas.
