Ingredients
Scale
Chicken and Sauce
- 2 pounds boneless skinless chicken breasts
- 0.5 cup honey mustard sauce
- 0.25 cup honey
- 0.25 cup Dijon mustard
- 2 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
For Serving
- 6 sandwich buns
- Optional toppings: lettuce, sliced pickles, red onion
Instructions
- Prepare Chicken and Sauce: Place the chicken breasts in the bottom of the slow cooker. In a bowl, whisk together the honey mustard sauce, honey, Dijon mustard, mayonnaise, apple cider vinegar, garlic powder, onion powder, salt, and black pepper until smooth.
- Coat Chicken with Sauce: Pour the prepared sauce evenly over the chicken in the slow cooker, turning to coat all pieces thoroughly.
- Slow Cook the Chicken: Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is very tender and fully cooked through.
- Shred the Chicken: Remove the lid and shred the chicken directly in the slow cooker using two forks. Stir to combine and coat the shredded chicken with the sauce.
- Thicken Sauce: Let the shredded chicken cook uncovered for an additional 10 minutes to slightly thicken the sauce.
- Assemble Sandwiches: Spoon the shredded chicken onto the sandwich buns and add desired toppings such as lettuce, sliced pickles, and red onion. Serve warm.
Notes
- For a tangier flavor, increase the amount of Dijon mustard slightly.
- This shredded chicken also works well in wraps or served over rice for a different meal option.
