  • 2 tbsp extra virgin olive oil (30 ml)

Eggs and Garlic Fry

  • 4 cage-free organic eggs
  • 4 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil (60 ml)
  • Dash black pepper
  • Pinch sea salt


Instructions

  1. Make the Parsley-Garlic Sauce: In a mortar, combine 2 roughly chopped garlic cloves, 2 tablespoons of chopped fresh parsley, and a pinch of sea salt. Pound the mixture with a pestle until it forms a smooth paste. Stir in 2 tablespoons of extra virgin olive oil until well combined. Set the sauce aside for later use.
  2. Heat the Olive Oil: Pour 1/4 cup (60 ml) of extra virgin olive oil into a small to medium-sized frying pan. Place the pan over medium heat to warm the oil while you prepare the eggs and garlic slices.
  3. Prep Eggs and Slice Garlic: Thinly slice the remaining 4 garlic cloves. Crack the 4 cage-free organic eggs into two separate small bowls, two eggs per bowl, to make it easier to add to the pan later.
  4. Fry the Garlic and Eggs: Once the olive oil is hot but not smoking, add half of the sliced garlic into the pan. Stir the garlic in the oil for 30 to 45 seconds until the slices are lightly browned and fragrant. Carefully add two eggs from a bowl to the pan without disturbing them. Arrange the browned garlic slices on top of the eggs. Let the eggs fry undisturbed.
  5. Spoon Oil Over the Eggs: When the eggs develop a golden crust on the bottom—about 1 to 2 minutes—use a spoon to carefully baste the hot garlic-infused oil over the tops of the eggs for a few seconds. This helps cook the egg whites gently.
  6. Repeat and Serve: Use a spatula to remove the cooked eggs from the pan, allowing excess oil to drip off. Repeat the frying process with the remaining garlic and eggs. Place all cooked eggs on a serving dish. Season with sea salt and a dash of black pepper. Generously spoon the reserved parsley-garlic sauce over the eggs.
