Description

This Spiced Salmon with Cheesy Asparagus and Garlic Herb Potatoes recipe is a delicious, hearty meal featuring perfectly seasoned salmon fillets baked alongside crispy garlic and herb-infused baby potatoes, with tender asparagus topped with melted mozzarella cheese. It’s a balanced and flavorful dish that comes together easily for a satisfying dinner.

Ingredients

Scale

Salmon

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cumin
  • ¼ teaspoon chili powder
  • Salt and pepper, to taste

Asparagus

  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded mozzarella cheese

Garlic Herb Potatoes

  • 1 ½ pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the components evenly.
  2. Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, dried rosemary, dried thyme, salt, and pepper. Arrange them in a single layer on a baking sheet to ensure they roast evenly and crisp up nicely.
  3. Prepare the Salmon: Rub the salmon fillets with olive oil. Then evenly sprinkle paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper over them. Place the salmon fillets on the same baking sheet as the potatoes or on a separate sheet if more space is needed.
  4. Bake Salmon and Potatoes: Place the baking sheet(s) in the preheated oven and bake for 15-20 minutes. The salmon should be cooked through and flake easily with a fork, while the potatoes become golden and tender.
  5. Prepare the Asparagus: While the salmon and potatoes bake, toss the trimmed asparagus with olive oil, garlic powder, salt, and pepper. After the initial 15 minutes of baking, add the asparagus to the baking sheet and sprinkle the shredded mozzarella cheese over it.
  6. Finish Baking: Continue baking for another 10 minutes or until the asparagus is tender and the cheese has melted and slightly browned.
  7. Serve: Remove all items from the oven and serve immediately while hot and fresh.

Notes

  • Make sure to cut potatoes evenly to promote uniform cooking.
  • If using different sized salmon fillets, adjust baking time accordingly to avoid overcooking.
  • You can substitute mozzarella cheese with Parmesan or cheddar for different flavor profiles.
  • For extra crispiness, broil for the last 2-3 minutes but watch closely to avoid burning.
  • Leftovers can be refrigerated and reheated gently in the oven or microwave.
