Ingredients
Scale
Potatoes
- 4 large potatoes, peeled and sliced into 1/4-inch rounds
- 2 tablespoons butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Filling
- 1/2 pound ground beef or turkey
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 cup fresh spinach, chopped
Cheese and Garnish
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- Fresh parsley, chopped
Instructions
- Preheat the Oven. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet to prevent sticking and to ensure even cooking.
- Prepare and Bake Potato Slices. Toss the potato slices with melted butter, salt, black pepper, and garlic powder to coat them evenly. Arrange half of the slices in a single layer on the baking sheet and bake for 15 minutes until they start to turn slightly golden and begin to soften.
- Cook the Meat Mixture. While the potatoes are baking, heat a skillet over medium heat and cook the ground beef until browned. Drain any excess fat, then season with salt, black pepper, smoked paprika, and dried oregano. Add the chopped spinach and cook together for 2 minutes until the spinach wilts and blends into the mixture.
- Assemble the Potato Stacks. Remove the potato slices from the oven. On each potato slice, layer a spoonful of the cooked meat and spinach mixture, then sprinkle with some shredded mozzarella and grated parmesan. Top each stack with another potato slice to form stacks.
- Finish Baking. Return the assembled potato stacks to the oven and bake for an additional 10 to 15 minutes, or until the cheese has melted and the potatoes on top are golden brown and fully cooked.
- Garnish and Serve. Once done, sprinkle chopped fresh parsley over the stacks for a burst of color and freshness. Serve warm and enjoy!
Notes
- You can substitute ground turkey for a leaner option or ground beef for richer flavor.
- Make sure potato slices are evenly cut for uniform baking and stacking.
- Use freshly grated parmesan for better melting and flavor compared to pre-grated cheese.
- If you prefer vegetarian, omit meat and add sautéed mushrooms or other veggies in the filling.
- These stacks reheat well in the oven for a quick meal later.
