Description

Sweet Alabama Pecan Bread is a moist and flavorful quick bread packed with rich brown sugar, crunchy pecans, and a hint of vanilla. Perfectly golden and delicious, it makes a great treat for breakfast, snack time, or dessert.

Ingredients

Scale

Wet Ingredients

  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Nuts

  • 1 cup chopped pecans
  • ½ cup whole pecans (for topping, optional)

Instructions

  1. Preheat Oven – Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper to ensure the bread does not stick.
  2. Mix Sugars & Oil – In a large bowl, whisk together the brown sugar, granulated sugar, and vegetable oil until the mixture is smooth and well combined.
  3. Add Eggs & Vanilla – Beat in the eggs one at a time to the sugar-oil mixture, ensuring each is fully incorporated, then stir in the vanilla extract for flavor.
  4. Prepare Dry Ingredients – In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening agent and seasoning.
  5. Combine Wet & Dry – Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined to avoid overmixing which can toughen the bread.
  6. Fold in Pecans – Gently fold the chopped pecans into the batter ensuring they are evenly distributed throughout the mixture.
  7. Pour & Decorate – Pour the batter into the prepared baking dish and smooth the surface with a spatula. Arrange the whole pecans evenly on top if desired for added texture and visual appeal.
  8. Bake – Place the baking dish in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean, indicating the bread is cooked through.
  9. Cool & Serve – Remove the bread from the oven and allow it to cool in the pan before slicing. Serve warm or at room temperature for best flavor and texture.

Notes

  • If you prefer, you can substitute vegetable oil with melted butter for a richer flavor.
  • Make sure not to overmix the batter once the dry ingredients are added to keep the bread tender.
  • Use parchment paper for easy removal and clean-up.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • For a more intense pecan flavor, toast the pecans lightly before adding them to the batter.
