Instructions
- Preheat Oven – Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper to ensure the bread does not stick.
- Mix Sugars & Oil – In a large bowl, whisk together the brown sugar, granulated sugar, and vegetable oil until the mixture is smooth and well combined.
- Add Eggs & Vanilla – Beat in the eggs one at a time to the sugar-oil mixture, ensuring each is fully incorporated, then stir in the vanilla extract for flavor.
- Prepare Dry Ingredients – In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening agent and seasoning.
- Combine Wet & Dry – Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined to avoid overmixing which can toughen the bread.
- Fold in Pecans – Gently fold the chopped pecans into the batter ensuring they are evenly distributed throughout the mixture.
- Pour & Decorate – Pour the batter into the prepared baking dish and smooth the surface with a spatula. Arrange the whole pecans evenly on top if desired for added texture and visual appeal.
- Bake – Place the baking dish in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean, indicating the bread is cooked through.
