Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Brown the Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon. Drain any excess fat for a leaner dish.
- Sauté the Onion: Add the chopped onion to the skillet with the beef. Cook and stir for 3-4 minutes until the onion becomes soft and translucent.
- Add Vegetables & Potatoes: Stir in the frozen mixed vegetables and diced potatoes. Season the mixture with salt and pepper. Then mix in the cream of mushroom soup thoroughly until all ingredients are evenly coated.
- Assemble & Bake: Transfer the mixture into a greased baking dish and cover it with aluminum foil. Bake in the preheated oven for 30 minutes to cook through.
- Add Cheese (Optional): If using cheese, remove the foil and sprinkle the shredded cheese over the casserole. Return to the oven and bake uncovered for an additional 10 minutes until the cheese is melted, bubbly, and golden brown.
